“Agnolotti di Carne al Tartufo”… This Truffle Ravioli recipe w/ Meat ravioli filling with Black Truffle Sauce is popular throughout Italy. However, it is particularly popular in the Umbria region where some of the best truffles can be found— including the famous Urbani truffles.

In this “Piatto” video recipe, we demonstrate how to make this gourmet agnolotti pasta recipe from start to finish. Learn how to make the ravioli dough by hand. This particular video recipe will demonstrate how to make homemade ravioli dough using a ravioli machine to roll the dough and a ravioli mold.

This homemade ravioli dough recipe features eggs infused with black truffle. Though optional, letting the eggs you plan to use to make the pasta sit in a jar with the whole truffles for about a day will infuse the eggs with the scent and flavor of the truffle— giving your pasta an extra punch of truffle!

This dish features black truffles in 4 forms: Infused in the eggs used to make the pasta (optional), infused in olive oil finely grated, sautéed in olive oil and fresh, coarsely grated truffle.

Tip: Don’t have a ravioli mold? You can create ravioli ‘free style’ on a floured surface and use a ravioli cutter wheel to seal and cut the ravioli.

TRUFFLE RAVIOLI RECIPE (Agnolotti Pasta Recipe)

Flour – 200 grams (All Purpose or ’00’)
Eggs – 2 whole
Salt – pinch
Olive Oil – 1 tablespoon

Flour – for rolling and flouring molds, Semolina and All Purpose
Tip: Leave whole truffles in a sealed jar with the 3 eggs overnight to infuse the eggs with an extra punch of truffle!

Ground Chicken – 50 grams
Ground Turkey – 50 grams
Ground Pork – 50 grams
Ground Beef – 50 grams
Lemon Zest – from 1/2 large lemon (or 1 small lemon)— untreated or organic!
Ground Nutmeg – 1/4 teaspoon (freshly ground is always better)
Black Pepper – 1/8 teaspoon, ground
Salt – very large pinch
Butter (Unsalted) – 1 tablespoon, room temperature
Egg – 1 yolk
Parmigiano- 2-3 tablespoons, finely grated – Check out Amazon for quality imported Parmigiano Reggiano (affiliate link):

Ginger (optional) – 1/4 teaspoon grated

Whole Black Truffle – finely grated — Can’t find it? Believe it or not, Amazon has quality Urbani truffles (affiliate link):
Whole Black Truffle – coarsely grated
Olive Oil (Extra Virgin) – 3/4 cup or so

Parmigiano- grated, to taste for garnish
