MAKING PASTA DOUGH – MASTERING PASTA . EPISODE 1 – (STANDARD/RAVIOLI/SEMOLINA)

Welcome to the first video of my MASTERING PASTA series.
The series where I take you on a journey trough the pasta world, and by the end of it you will be making pasta dough like a pro!

In this video I will explain you how to make 3 different types of pasta dough(including semolina dough), and I will teach what are they for.

I will be using this recipes for all the pasta that I am making on this series.

RECIPES:

STANDARD DOUGH
360 grams ’00’ flour
5g grams of salt
300 grams egg yolk
6 grams extra virgin oil

RAVIOLI DOUGH
360 grams ’00’ flour
90 grams egg yolk
100 grams egg white
5 grams of salt
6 grams extra virgin oil

SEMOLINA DOUGH
180 grams semolina flour
180 grams ’00’ flour
180 grams warm water
10 grams of salt

Make sure you REST the dough before using it and, for best results, use it within 2 days!
