In this ‘Piatto’ video recipe, Lulu will demonstrate how to make Tortellini Pasta by hand for an Italian Christmas Dinner. This tortellini filling recipe features all of the ingredients traditional in Italian tortellini including: pork, beef, prosciutto, mortadella, butter, parmigiano reggiano and eggs.

This is the exact Italian Christmas dinner recipe that Lulu has been using to make tortellini from scratch in Italy for decades!

Lulu will use a Kenwood Multipro food processor to blend the meats together. Then, she’ll show how to make the tortellini pasta dough by hand and an old-style Italian Imperia Pasta Machine to stretch the tortellini pasta dough. Using a Kitchenaid pasta attachment? You’ll finish at a setting of ‘6’ when stretching the pasta.

INGREDIENTS for making Tortellini Pasta Filling

Pork Loin (Ground) – 200 grams
Beef or Veal (Ground) – 200 grams
Prosciutto di Parma – 200 grams (@ProsciuttodiParmaDOP)
Mortadella – 75 grams
Turkey (Ground) – 100 grams
Butter – 100 grams, softened
Parmigiano Reggiano – 100 grams (freshly grated)
Egg Yolks – 3
Olive Oil – 1 Tablespoon
Ground Pepper – 1/4 teaspoon
Nutmeg – 1/4 teaspoon (freshly ground)
Lemon Zest – 1 Tablespoon
Fresh Ginger – 1 Teaspoon
Fine Salt – pinch

INGREDIENTS for making Tortellini Pasta Dough
Eggs – 4 whole eggs
Flour (All Purpose_ – 400 grams
Olive Oil – 1 Tablespoon
Fine Salt – pinch
