Recipe
Mushrooms 4 to 8 oz
Shallot 1 to 2
Heirloom Grape Tomatoes 4 to 8 oz
Chili flakes
Mushroom Ravioli 9 to 18 oz
Sour cream 4 tbs to 8 tbs
Veggie Stock Concentrate 1 to 2
Parmesan Cheese 1/2 cup

1. Bring water to boil and add salt. Wash and dry all produce. Trim and slice mushrooms. Halve, peel, and thinly slice shallots. Halve the tomatoes. Slice parsley leaves and finly chop all the rest of the bunch.

2. Cook the veggies. Heat a large drizzle of olive oil in a pan on medium heat. Add mushrooms and cook, stirring until browned. Add shallots, a pinch of chili flakes to taste, and another drizzel of olive oil. Cook stirring until shallot is sofftened, 2-3 minutes.

3. Cook Ravioli. Once water is boiling add ravioli and reduce to low heat. Cook for 4 minutes. Carefull reserve 1/2 of the pasta cooking water then drain.

4. Make sauce. Once shallot is softened, stir tomatoes into pan, then reduce heat to low. Stir in sour cream, stock, half the parmesan, and reserved water. Season with salt and pepper, parsley, and a pinch more of chili flakes if desired.

5. Toss Ravioli. Add ravioli to pan. Increase the heat to medium and gently toss to coat ravioli. Cook until sauce thickens slightly.

6. Plate and serve!!!
